#DISHES

Migas

Made with wheat or corn flour, water, oil and salt. They are accompanied by fish broth, boiled red and green peppers, roasted and dried, dried tomato, oil and garlic and “tajas” (small fried pieces of rib, lean and saúra, all of them pork). They are also usually accompanied by pieces of fried black pudding, dry fried peppers, tomatoes, roasted garlic cloves, radishes, etc…

Pelotas: Stew or stew to which meatballs made from cornmeal, longaniza, red peppers and garlic are added.

Gurullos

Small pieces of flour dough that are added to the stew and sometimes contain partridge. or rabbit.

Gazpacho

It is made with water, vinegar, cucumber, onion and tomato. It is seasoned with garlic and bread soups are added.

Remojón: It is made with legs, red peppers, dried green peppers and garlic. All this and once cooked is crushed and added sausage, pieces of fried bacon, cod and garnished with pieces of boiled egg.

Puchero

Kind of stew of chickpeas, pork, black pudding, potatoes and vegetables

Trigo guisao

Stew to which is added wheat that has previously been minced and then soaked. It can be made as a stew or soup and in this case you put fennel and turnips.

Fritá de Sangre

Fried onion and tomato with cooked blood.

Caldo de huevos

Stew with tomato sauce, onion, garlic, peppers, potatoes and eggs.

Ajo 

Made with breadcrumbs soaked in vinegar, peeled almonds, garlic, oil, cooked legs and salt. It is beaten until it becomes a sauce. It is eaten with boiled potatoes, with bread, with chips, etc…
